Our dear guest blogger Bika is busy providing you with fabulous new recipes using the winter variety. She just thinks it's a great option and can't get enough of it. This time she has designed a suitable recipe for the autumn season with the new variety: Pumpkin Cookies. Bika, with the pretzels and nuts she added, the cookies remind you a bit of a party snack or a movie night. Of course they are perfect for both. Either way, enjoy them.
Preparation time: 10 minutes | Rest time: 30 minutes | Baking time: 25 minutes
Ingredients for about 20 cookies:
250g flour
1 teaspoon pumpkin spice*
1/2 tsp baking powder
1/4 tsp salt
100g butter
50g brown sugar
1 packet of vanilla sugar
1 egg
75g pumpkin puree
50g 3Bears Porridge A hearty classic
50g 3Bears Porridge Winter Magic
25g walnuts
Two handfuls of mini pretzels
*Here's a quick recipe for mixing pumpkin spice together:
5 tbsp cinnamon (ground)2 tbsp ginger (ground)
2 tbsp nutmeg (ground)
1 tbsp cloves (ground)
Preparation:
- Mix butter, sugar and vanilla sugar with a hand mixer.
- Add the egg and pumpkin puree and mix again.
- Add flour, pumpkin spice, baking powder and salt and mix everything well again.
- Chop the walnuts and pretzels (set aside about 20 pretzels for later).
- Now stir in the oat flakes, walnuts and chopped pretzels.
- Let the dough rest in the refrigerator for at least half an hour.
- Preheat the oven to 175 degrees top and bottom heat.
- Form small balls out of the dough and flatten them into a round cookie. Press a mini pretzel into the middle of each cookie.
- Bake the cookies for about 25 minutes.
Remove from the oven, let cool and you can enjoy your pumpkin cookies!
