3Bears made it possible for dear Annika to take part in the Porridge World Championships in Scotland - Golden Spurtle. Since winning the Golden Porridge Bowl, the German preliminary round, Annika has been feverishly searching for an innovative porridge recipe for the international competition. Ironically, it came to her while she was on vacation under the palm trees while talking to her friend: “Oktoberfest Porridge”! On Fuerteventura, it was just a “pipe dream” but straight away at home we started trying and testing things out. Since her layered overnight oats recipe "Tiramisu with a difference" had already proven victorious at the Golden Porridge Bowl, she also competed at the World Championships with a cold porridge version. Arranged in small beer glasses, an innovative Oktoberfest creation is conjured up layer by layer from porridge, beer cream and beer foam crown. With a mixture of roasted almonds and beer syrup, it brings the Oktoberfest feeling to the Scottish Highlands. Let her recipe, just like the Scottish jury, transport you culinary to the beer benches of the Oktoberfest. Have fun imitating!
For three layered desserts.
Ingredients
400g low-fat milk
2 tsp cocoa
1 tsp cinnamon
100g cream
100g mascarpone
100g cream cheese
50g roasted almonds
50g cocoa nibs
Lemon zest
2 eggs
1 tsp sugar
Beer syrup
Hop syrup
Preparation:
Overnight Oats
- 3Bears Crunchy classic and leave to prepare low-fat milk overnight as overnight oats
- The next day: chop roasted almonds and stir in 2 teaspoons cocoa, 1 teaspoon cinnamon and cocoa nibs.
Beer cream
- Whip the cream
- Mix the mascarpone and cream cheese with lemon zest and beer syrup and fold in the whipped cream.
Beer crown
- Separate the yolks and whites of the two eggs. Beat the egg whites with sugar until stiff and season with hop syrup.
Arrange:
Arrange layer by layer in small beer glasses or similarly high decorative glasses:
- Layer overnight oats
- Layer of beer cream
- Layer of beer crown (apply to the beer cream with a piping bag)
