Spicy Avocado Porridge with Wild Mushrooms

Here at 3Bears we love our fruit varieties, but you really shouldn't underestimate our hearty classic. This hearty classic can be used to prepare more than just sweet porridge. Our hearty classic is the perfect base for a hearty porridge. Juicy mushrooms, fresh basil and a ripe avocado - it couldn't be better! The hearty porridge is prepared similar to a risotto. Instead of stirring rice for a long time, the hearty porridge is ready as usual in just a few minutes and impresses with its creamy consistency and a crunchy bite.

Tip: Try this hearty porridge with a poached egg - to recharge your batteries after a sports session.

 

Ingredients

Preparation time: approx. 15 minutes | For 2 people

  • 100g 3Bears Porridge A hearty classic
  • 1 handful of fresh spinach leaves
  • 300ml vegetable broth

    For the topping

    • 100g mixed wild mushrooms (e.g. porcini mushrooms)
    • 1 tbsp olive oil
    • 100g goat's cream cheese or feta
    • 1 avocado
    • 2 cherry tomatoes
    • Salt and pepper, a few basil leaves if desired

      Preparation

      1. Wash the spinach, sort it and shake it dry. Mix the porridge with vegetable broth and spinach and simmer over medium heat for 3 minutes.
      2. Gently rub the wild mushrooms with a kitchen towel. Heat the olive oil and briefly fry the mushrooms in it. Crumble the goat's cream cheese into coarse pieces. Slice the avocado. Wash the tomatoes, remove the stems and halve the tomatoes.
      3. Divide the porridge between two bowls. Pour the mushroom mixture onto the porridge and garnish with avocado slices, goat cheese pieces and halved cherry tomatoes. Season with salt and pepper if desired and garnish with a few basil leaves.
