Carrot cake for the win! If this isn't the perfect breakfast for Easter we do know what is! In the recipe for the Carrot Cake Overnight Oats, we combine our oat heroes with the main ingredients of the popular Easter classic - carrot cake. With our Wild Bowls Porridge Kerniges Bircher we have the perfect base for the recipe. The fruity apple pieces, crunchy hazelnuts and raisins go well with carrot cake, like the Easter bunny does at Easter! Carrots shouldn't be missing from this overnight oats recipe - of course. The highlight of a really good carrot cake is the cream cheese frosting. Our carrot cake overnight oats therefore have a quark topping, flavoured with a little orange.
Ingredients
For 2 servings:
For the overnight oats:
- 100g 3Bears Wild Bowls Hearty Bircher
- 200ml 3Bears organic oat drink
- 1 grated carrot
- 20g walnuts
- 1 pinch of cinnamon
- Zest of an organic orange
For the curd topping
- 250g quark
- 3 tbsp freshly squeezed orange juice
- 1 tbsp agave syrup
Preparation
For the overnight oats, mix the hearty Bircher porridge mixture with our organic oat drink. Then peel the carrot, grate it finely and add it to the overnight oats mixture. Chop the walnuts into small pieces and stir in the same way.
Season the overnight oats with cinnamon and the peel of an organic orange.
So that the cold porridge variant can fully develop, the overnight oats are placed in the refrigerator overnight or, for at least 6 hours - don’t worry, overnight oats work even without moonshine.
For the topping, mix the quark with freshly squeezed orange juice. Depending on your taste, you can sweeten the quark cream with a little agave syrup or honey.
The next morning your overnight oats are nice and creamy and waiting to be spooned on top with the curd cream.
